Not for Me/Cook's Error
Audrey's Yogurt Cake - On Rue Tatin - Overshot the oven temp by 25 degrees (even though I undershot the time by 5 minutes as I do on all first time cake recipes). However, the cake did not have the rising power I'm used to in my cake recipes.

Lavish crackers - The Bread Baker's Apprentice - did not roll them thin enough in the middle and too thin on the outer edges -- burnt on the edges and the middles were a tad soft.

-Magic Bars-Cook's Illustrated-made for a party and good, but we are not huge coconut fans here.

-Baked Macaroni and cheese-HTCEV (kids wanted a gooey mac and cheese and this was not it; too bland for DH and I even after doctoring a bit with hot sauce and worcestershire.)

Excellent

Grilled Pizzas w/ Asparagus & Sun-Dried Tomatoes—The Oregonian Food Day—Used sheep milk ricotta salata instead of regular ricotta.
Rich Chocolate Zucchini Bread—Olive Oil Baking

Very Good

Zucchini Bread—Olive Oil Baking—Used applesauce instead of yogurt. Needs nuts.

Andrea--could you give a short review of Broccoli Chowder with Corn and Bacon (Everyday Food)? I tore it out of the magazine to try, but you didn't rate it too highly.

Not too many new recipes this month, but I did buy a house so I am letting it be OK. And I am letting myself off for the rest of the year, too, as I move and settle in :rolleyes: :D

Good, Make Again

9/11 Pork Ragu with Pasta Family Circle 11/1/07 Really liked this—tasted like spaghetti. Used bone-in ribs, maybe try real Italian seasoning, reversed browning (ribs first, then veggies).

Good, No Need to Make Again

9/30 Cornbread No Chaser Alton Brown OK—liked method and maybe try that again (grind in food processor and then soak in milk). Too salty, no sugar in recipe. Better with jam than with soup.

9/27 Chocolate Cupcakes with Vanilla Cream Cheese Frosting CL 10/06 Eh. Dry, even though I pulled them out at right time. Not very chocolatey even though I added mini-chips. Frosting was fine.

9/23 Won Ton Soup CL 1/00 Good, but an off taste from the vinegar I think. And something missing.

9/7 Peach Upside-Down Cake Hungry for Comfort Good, but a little heavy. Did not sift the flour before measuring. Could make again if circumstances called for it.

APPLE BARS WITH OATMEAL CRUMB TOPPING
CRUST:
1 cup (2 sticks) unsalted butter, softened and cut into small pieces
2 cups all-purpose flour
TOPPING:
1 1/2 cups all-purpose flour
1 cup firmly packed light brown sugar
2/3 cup rolled oats (not quick cooking), plus 3 tablespoons (for sprinkling)
1/2 teaspoon cinnamon
2/3 cup (1 1/2 sticks) unsalted butter, softened and cut into small pieces
FILLING:
One 21-ounce can apple pie filling
GLAZE:
1 cup confectioner's sugar, sifted
1 tablespoon plus 1 teaspoon water

Preheat oven to 350 degrees.

TO MAKE THE CRUST:
In a large bowl, on the medium speed of an electric mixer, beat together the butter and flour until crumbly and well combined. Transfer the mixture to an ungreased 13 X 9 baking pan, using your hands, pat the crust firmly and evenly into the pan.

Bake for 20 minutes. Remove from the oven and allow to cool completely, about 45 minutes.

TO MAKE THE TOPPING:
In a large bowl, mix together the flour, sugar, oats and cinnamon.

Using a pastry blender, cut the butter until the mixture resembles coarse crumbs. Then, using your hands, toss until all the ingredients are well combined. Set aside.

When the crust is cool, gently and evenly spread the apple filling over the crust, leaving a 1/4-inch edge all around.

Sprinkle the crumb topping over the filling, then sprinkle the additional 3 tablespoons of rolled oats over the crumb topping.

Bake for 45 minutes. Allow to cool to room temperature.

TO MAKE THE GLAZE:
Combine the sugar and water, and beat until smooth. Cover until ready to use.

When the bars are completely cool, drizzle the glaze decoratively over the crumb topping. Allow the glaze to set for 15-20 minutes before cutting and serving.
