Please help! I have some spectacular heirloom tomatoes screaming out to be made into a Gazpacho. I have misplaced my copy of the Columbia Restaurant (Tampa) fantastic Gazpacho recipe. Can somebody help?

While we're on this thread, maybe we can come up with The Best Gazpacho recipe. I've tried a number of them and years ago settled for the one from Columbia Restaurant. I would love to see other favorites.

Sorry, Adriana, I can't help you with the Columbia recipe - I searched copykat.com & the Copy Cat section at kitchenlink.com without success. But let me refer you to a prior thread from last week on gazpacho. Enjoy!

In desperation I called a friend in Tampa and asked her to locate a copy of the Columbia restaurant Cookbook and she kindly obliged. Once you have tried this Gazpacho you will stop looking for another recipe to try - it is fabulous!

This recipe is from the famous Columbia Restaurant in Ybor City.

Gazpacho Andaluz
2 cups water
1 med onion finely chopped
3 ripe tomatoes, peeled, seeded & chopped
1 cucumber, peeled and sliced
4 Tbs white vinegar
2 tsp salt
3 cloves garlic, crushed
4 slices bread, cut in pieces
4 Tbs olive oil

1 cucumber, diced
1 green pepper, diced
1 med onion, finely chopped
1 tomato, finely chopped
1 cup croutons

Combine first nine ingredients and let stand for 1 hour. Puree in a
blender and chill in refrigerator. Garnish and serve chilled in soup
bowls. Serves 4
