View Full Version : Can you freeze or can fresh tomatoe soup?

Emilycat and doggerham posted wonderful tomatoe soup recipes. Even though it's still to early for lots of ripe tomatoes from the garden (where I live), I was wondering If anyone has frozen or canned tomatoe soup? I always can sauces and salsas, but those are easier to buy if needed than good tomatoe soup!! Store bought winter tomatoes are never the same as home grown!

Any help (detailed if possible for canning) would be greatly appreciated. TIA!

I know it's a dumb question, but , I wasn't sure about the milk/ cream cheese.

Not a dumb question at all! I froze CL's Tomato-Basil Soup with great success. In fact, it was a recipe that I would use for guests last year (not enough good fresh tomatoes from the garden this year) because I could make it in advance and freeze it. Nothing like having some good tomato soup in fall/winter when all the fresh tomatoes are long gone!

Erin, I have done both to tomato soup. I've frozen it in containers or plastic bags. And I've also canned it. I'm pretty sure I just followed the canning instructions (pressure and time) for canning tomatoes. However, the stuff I cooked had neither milk nor cheese in it. You are right; it is a wonderful treat in the winter. :)

Thanks for the advice! I think I'll freeze it instead of canning. ( the lazy way :D ) Now if those tomatoes would only start to get ripe, and the flowers that are left would turn into tomatoes.
