View Full Version : Question re blueberry pound cake

I was looking for through old threads for a cake/pie to make for my Mom & Dad when they come over for dinner this week (they just celebrated their 33rd wedding anniversary). I was thinking about the blueberry pound cake but saw that it makes 16 servings and that's just too many (I don't want too much left-overs). What do you think about splitting the recipe in half and baking it in a banana bread pan? Would that work? If not, maybe I'll just wait and make this cake for an occasion when more people will be around. Thanks!

I don't see why that wouldn't work. Is a banana bread pan roughly the same size as a standard loaf pan? I think that most recipes that can be made in a tube or bundt pan, also make two loaf cakes. So, making half of the batter should work for one loaf cake. Good luck! It is a yummy cake.

I also think that you could cut it in half and bake in a loaf pan.
Another suggestion might be to freeze the leftovers. I have frozen it in individual slices with great results. It helps me to not want to eat it all at once! :)

Too much Blueberry Pound Cake???? NEVER! I ate half the cake during a PMS induced frenzy. :D

I always make two loaves out of the pound cake recipe, and freeze one. It's so nice to be able to whip the other one out when we have companmy - no baking! It freezes well. (This also helps us not go nuts and eat all 16 servings in one day! :) )

Nice timing with this thread. Now that the heat wave has broken I can turn the oven on again. And I have blueberries in the freezer...Perhaps I'll make two loaves tomorrow and bring one to work on Monday while the other goes in the freezer.

funnybone and Lynn B, it's great to know that there are people on this board who eat/think the way my family and I do!! I need to try this recipe--I think I'll go for making 2 bundts--one for today, one for tonight.........
