I saw this in the Sun Sential and thought about all of you.
It is not light,
10tbs unsalted butter
2/3 cup of sugar
1 1/2 tea vanilla
1 1/4 cup of all purpose flour
1 tea baking powder
1 1/4 lbs of plums pitted and quartered
crumb topping
1/2 cup of unsalted butter softened
2/3 cup light brown sugar
1 cup all purpose flour
confectionsers sugar
To make cake:
butter one 10 inch round cake pan 2 inch deep
line bottom with round of parachment paper or wax paper
beat butter, sugar and vanila until soft and light in color. beat in eggs yolks one at a time, and continue beating until batter smooth, like buttercream. Stir flour and baking powder into batter. spread batter evenly prepared pan arrange plums skin side downon batter leaving a one inch margin at the edge.
To make crumbs: Beat butter and brown sugar until soft and light. Stir in flour and rub mixture by hand to form coarse crumbs. Scatter crumbs over the entire surface of batter and plums.
Bake on center oven rack at 350 deg. about 1 hour until center is firm when pressed with fingertip and crumbs are a dep golden color. Cool in pan on rack. Unmold and dust with the confectioners sugar. Makes 8 to 10 servings
