View Full Version : Leftover muffins...any makeover recipes??

Hi, I love to make muffins in the morning, but between me and my husband, I end up with some leftovers. I freeze some of them, or reheat after a few days and ate them. But, I don't really like the taste of leftover muffins...you know, the fresh is the best!

I'm wondering if I could use them for baking bread pudding or something....Are they too soft, maybe? I should give it a try. Meanwhile, is anyone know any makeover recipes for old muffins? People on this BB have been so helpful I'm count on you!!

As muffins are more cake-like than bread-like, I would think that making muffins into bread pudding might not turn out the same. But it never hurts to try, right? Let us know how it turns out if you decide to make pudding out of it.

Before I read the posts I thought "Why not bread pudding?" When I was in grad school, the head cook of the cafeteria (which was better than a whole lot of restaurants I've known) would take left over cake and make a sort of bread pudding with it. It was delicious.

I wish I had the recipe; she used yellow cake, I think (though they also made cake doughnuts and may have used them).

If you're going to try this, my suggestion is that you slice the muffins vertically, lay them on a cookie sheet and bake until they're crisp - say 15 minutes in a 350 degree oven. This would give them some more 'body'. I'd also decrease the sugar in the bread pudding recipe by perhaps a third to a half.

How about freezing them and then later using them to create a sort of breakfast trifle (e.g., broken up and tossed with yogurt, fruit, and nuts).

Thanks! I'll try making bread pudding. Also, I think make parfet sounds good idea....I'd try. If the bread pudding turned out good, I'll let you guys know.

How about a Dessert Trifle (as opposed to a Breakfast Trifle). Make up a batch of instant vanilla pudding, lighten it with some whipped cream or topping, and layer the cream mixture and the cubed muffins (sprinkled with rum perhaps) and some fruit, strawberries, blueberries, mangoes, etc. , your choice.

Trifle was my first thought (I don't care for bread pudding), and second would be a shortcake. Have fun experimenting.
