IMHO - This recipe is soooooooo good!! I used a combination of zucchini and yellow squash because that is what I had in the garden. I definately liked having the zucchini in the casserole. I also must admit to adding a little extra provolone cheese:o ... (didn't want to waste it!) The hot italian sausage gave the dish a nice "kick" and the cheese, sour cream and mushroom soup made it so creamy. I will make this again and again!

Peggy. this recipe looked so good. I'm glad to hear it's a keeper.
Just curious, did you serve this as a side dish or main entree?
The calories looked too low for all the ingredients but it seems kind of hearty for a side dish.

I served it as a side dish along with Grilled Chicken and a green salad. I just looked at the calorie count and I agree, it seems way too low. Of course, you have to look at CL's serving size and 2/3 cup isn't really very much. The casserole is on the hearty side and I think it could stand alone as a main course with a larger serving size. I hope you like it as much as we did!

But a little on the soupy side. It did not measure up to the full fat one someone in our supper club made a couple weeks ago.

The differences in the ingredients- all in the fat, naturally. 1/2 c. less sour cream and 2/3 less cheese. I will definitely make again- but will try sharp cheddar instead of provolone. I haven't figured out if sauting the squash might make it less soupy than nuking- my next experiment.

If I had not had the full fat version, however, I would have thought it was great, just soupy.

Last week, a member of my dinner club gave me 2 large yellow squash. I ended up stuffing one of them with a rice, cheese, herbs, and a wonderful Sicilian chicken sausage that the demonstrator at TJ's enticed me with.

The next night, I made a Moosewood soup that had squash, onions, sage, corn and tumeric in it and it was one of the worst soups that I had ever had. I ended up tossing it out.

We thought the casserole tasted too much of mushroom soup rather than squash. It won't be a repeater for us.

We thought the Squash Casserole was delicious!!! A definite keeper! After reading the posts on the BB, I decided to steam the yellow squash and drain very well. I also didn't use the entire can of mushroom soup about 3/4 of it. I thought it was fabulous, my hubby thought it was great. (Squash is not one of his favorites) Served it with the Crisp crusted catfish. Have leftovers to munch on today and tomorrow. Another 5 stars. Would definitely serve to company if I could find some that liked yellow squash. LaurieC :D
