I love lasagna and would like to freeze the leftovers. Being single, there's no way to eat all of it before it spoils in the fridge. Does anyone know if it can be frozen? Any benefits to freezing it before it's cooked? Thanks for you input!

I freeze lasagna all the time. I cut the remaining lasagna into appropiate servings and place them into the Gladware cheapy containers. When I'm ready to eat it i put in the fridge to defrost the night before I want to eat it. Then heat it in the microwave for about 3 mins. It tastes like it did when it was fresh from the oven. I haven't left any leftovers in the freezer for more than a month so I'm not sure how long it's good for. Good luck.

I also freeze it, but I don't bother defrosting first. I just pop it into the microwave frozen and select the control for "frozen entrees". It takes about 8 minutes to cook.

BTW, the Lasagna with tomato and basil sauce in the July issue is fantastic. I highly recommend it.

I do the same. I cut in individual squares and wrap them good in saran wrap and then store squares in ziplock bags. http://www.cookinglight.com/bbs/smile.gif
