Yet another apple cake recipe

Here's my Mom's recipe, which is by far my favorite. BTW, I seem to collect apple cake and other apple recipes, so I apologize if there have been too many posted. I don't think you can ever have too many apple desserts :D

3 eggs
1-3/4 c sugar
1 c oil
1 t baking soda
2-1/2 c flour
1 t cinnamon
1/2 t salt
1 t vanilla
1/2 c chopped nuts (I like walnuts)
4 c chopped apples (about 3 medium)

In a large bowl, beat the eggs and sugar together until light. Switch to a wooden spoon and stir in the rest of the ingredients in the order listed. Makes a very thick batter. Grease a 9×13 pan and bake at 350 for 1 hour.

Looks good to me so thanks for posting. Sometimes I'm not in the mood for recipes that require I haul out the big KA, so this one looks like it's perfect and quick.
