I just made this for the first time and wow! It was very nice and quick to make. I did make a few changes, however:
1. I added about 1/4 cup of oatmeal to the topping
2. I substituted toasted pinenuts for the almonds
The filling was a touch watery, so I might consider adding an extra tbsp of cornstarch to the fruit, and another 3/4 tsp of ginger might be nice. The level of sweetness was just right.

I made this too and it was great. I did omit the almonds though. My filling wasn't watery at all, I guess it depends on your peaches. I couldn't taste the ginger much but it was still excellent.

We made this last night and it was great. As per the suggestions above, I added oatmeal to the topping (1/2 cup) and doubled the amount of ginger. I also added a splash of almond extract to the peaches.
Delicious and easy!

It must have everything to do with the peaches. Mine was very thin and so juicy that the topping practically disappeared. Great flavor but more soupy than not.

Made this tonight with wonderful fresh peaches.
I doubled the entire crisp-part of the recipe (I frequently do that!)and added about 1 cup of oatmeal. I also added a teaspoonful of almond extract, and doubled the ginger.
Delicious! The ginger comes through nicely - but doesn't overpower the peaches. A wonderful summer dessert!

Peach-Ginger Crisp
Ginger and toasted almonds add subtle flavor to the peaches in this favorite dessert.
Ingredients
1/2 cup all-purpose flour
1/4 cup granulated sugar
1/4 cup packed brown sugar
3 tablespoons chilled butter, cut into small pieces
2 tablespoons sliced almonds, toasted
6 cups sliced peeled peaches (about 3 pounds)
1 tablespoon granulated sugar
2 teaspoons cornstarch
2 teaspoons lemon juice
3/4 teaspoon minced peeled fresh ginger
Directions
Preheat oven to 375°.
Lightly spoon flour into a dry measuring cup, and level with a knife. Combine the flour, 1/4 cup granulated sugar, and brown sugar in a bowl. Cut in butter with a pastry blender or 2 knives until crumbly. Stir in almonds.
Combine peaches and next 4 ingredients in a bowl. Spoon peach mixture into an 8-inch square baking dish. Sprinkle with flour mixture. Bake mixture at 375° for 45 minutes or until lightly browned and bubbly.
Preparation Time: 18 minutes
Cooking Time: 45 minutes
Servings/Serving Size: Yield: 5 servings (serving size: 1 cup).

Thanks, Val! I had a feeling you might be the one to post for me;) . My mom brought us a whole bunch of peaches, so I think I'll try this today (or tomorrow...it's supposed to be 71 instead of 91!:rolleyes: )
