These mashed potatoes are so rich and delicious! I actually licked the serving bowl clean before tossing it into the dishwasher! Yum! Dh loved these too and he usually hates blue cheese. He did notice a different tang, but ate several helpings anyway. I love blue cheese and thought these were excellent. A treasure to keep in my recipe box. I added 1 extra garlic clove by accident and would repeat my error again. Also - I would bet this is also great with goat cheese for those who don't care for blue cheese.
