View Full Version : ISO Asian Peanut Salad Dressing?

We went to our favorite asian food restaurant for dinner recently. When they served the salad I remembered how much my mom loved the dressing. I'd love to recreate it for her. I bought a container of it to bring home, so I can compare until I get a recipe right.
I know it has a peanut butter base, cilantro, ginger, vinegar, and ginger. It isn't spicy and has some sweetener though I'm not sure what. Does anyone have a recipe like this that I could start with?

I use this sauce on tofu often. It doesn't have vinegar or cilantro, but those could easily be added, and I think if you added a bit more water to thin it out, it could be just right for salad dressing.

3/4 cup peanut butter
3 tablespoons soy sauce
2 1/2 tablespoons lime juice
2 tablespoons sugar
2 teaspoons fresh ginger, grated
1/2 teaspoon red curry paste
