View Full Version : More questions re blueberry pound cake

I've read all the rave reviews and I'm really excited to make this cake for my parents tomorrow night. I have a few questions though....

I've read that you can use either 1/2 cup light butter or 1/3 cup regular butter. Which do you recommend? Does it really make much of a difference?

I plan on making the cake in the afternoon to serve after dinner. Do you recommend that I wait and make the icing right before I serve it or doesn't it matter?

I plan on making this cake in 2 loaf pans. Unfortunately, I may have to cook one loaf at a time cause I can't seem to find my other loaf pan. How should I adjust the cooking time?

Thanks everyone! I'm really looking forward to this cake. My Dad loves pound cake so I think he will especially like it. I plan to serve it with lowfat vanilla ice cream. Yum!:)

rinsav - I made the blueberry pound cake last week in two loaf pans, and I shortened the cooking time. I think the original time was 1 hour 15 minutes, and I checked after 1 hour and they were done (you should probably check after 50 min. or so in case your oven is different).

I put the glaze on ahead of time, took one loaf to a friend's house, and put the other loaf in the freezer. I think it looks a bit nicer if you can pour the glaze on the warm cake just before serving - as it cools, the glaze becomes more transparent and you can't see it on the cake as well. I'd do whatever is easiest for you though, since it tastes the same either way.

That light butter gets me stumped too! I've read that light butter is made of 50% butter. By weight, it has half the fat and calories. I would substitute half the regular butter, but I'm not sure how it would affect the volume or texture.

There is a lot of information on using and not using light butter in place of regular but nothing about using regular in place of light.

Did you warm up the cake again before serving? By the way, how did you and your friends like the cake? From all the great reviews I've read, I bet they loved it!
