View Full Version : Filet Migon with Peppercorn Mustard Sauce

I saw this recipe in a cooking light magazine in Albertson’s last week and thought it looked delicious. However, the magazine cost about ten dollars, and the Filet Migon with peppercorn mustard sauce is the only recipe I would be interested in making.

Please post this recipe, and please comment on this recipe as well because I know filet migon is expensive.

A Cooking Light magazine cost 10 dollars?? I don't think it was *this* Cooking Light. I have not seen a Filet Mignon with Peppercorn Mustard Sauce in CL, and it certainly is not in the CL that is currently on the newstand. Must be some other magazine, but that recipe does sound delicious. If you are interested, there is a filet mignon recipe in the current CL - Filet Mignon with Mushroom Wine Sauce. It is delicious! I can post if you want it.

I just happened to be going through some old CL's looking for something to make for dinner tonight and then I saw your posting. I was thinking about making this tonight, but have decided to grill soem tuna instead. It was in the October 98 issue:

Filet Mignon with Mustard Peppercorn Sauce

1/4 teaspoon salt
1/4 teaspoon coarsely ground or cracked pepper
4 (4-ounce) beef tenderloin steaks (1 1/2 inches thick)
1 teaspoon vegetable oil
1/3 cup minced shallots
1/2 cup cognac
1/2 cup fat-free beef broth
1/4 cup green peppercorn or Dijon mustard

Sprinkle salt and pepper over steaks. Heat oil in a 9-inch cast-iron skillet over medium-high heat until hot. Add steaks;cook 5 minutes on each side or until desired degree of doneness. Remove steaks from skillet; keep warm. Add shallots to skillet; saute 30 seconds. Add cognac; cook 10 seconds. Add broth and mustard;stir well. Reduce heat; cook 2 minutes, stirring constantly. Serve steaks with sauce. Yield: 4 servings (serving size: 1 steak and 2 tablespoons sauce).

This recipe is from a special spring/summer issue, and there are only a few copies still around. I do have the August issue that has the filet migon with mushroom sauce recipe.

Thanks for filling me in. Now I feel silly! Anyway, I guess this is something that just went to the news stand and subscribers do not get??? I feel cheated out of a magazine! Was there even an ad in CL telling us about it?

Oh Yes...this is a great magazine (actually like a softcover book) and cost $10.00 but worth it to me since I have not been a subscriber for very long. It has beautiful pictures too...just about for every recipe. I believe I purchased it in June or so. The special issue is called The Best Cooking Light (special cookbook edition) which has 125 of all-time greatest recipes selected from 13 years of Cooking Light. The Filet Mignon with Peppercorn-Mustard Sauce in on the cover and looks delish! http://www.cookinglight.com/bbs/biggrin.gif
