One of my friends recently enjoyed a Apricot Crunch Bar at Peets Coffee. It had a crust, then a fruit layer, then it was topped with a struesel like mixture. I know that Cooking Light has published some similar recipes and I am not sure I have heard some favorable reviews on these. Anyone have a recipe to share?

I know exactly what you're talking about, I love those bars. The best recipe I've found is one that valchemist posted on this thread for Apricot Oat Bars:

I've made them about once a week since she posted it and with all types of jam and they are so good. I tried all the CL versions of this type of bar and they were all awful - dry, crumbly and powdery.
