View Full Version : Issue with cookies (Oat. Choc. Chip w/ Pecans - CL 12/07)

These are my go to cookies - quick and easy to make and delicious. However tonight, something is amiss and I'm not sure what. Originally I thought I just added a few too many oats as the batter did not stick together as well (I was being lazy about measuring... it's late and I was rushing!) But now the first two batches are out of the oven they are weird. Much more puffy than usual and a very different texture, not sure I can explain. They're kind of crispy and airy but not in a good airy cookie kind of way.

Anyway, besides a tad too much oatmeal, the only other difference is that I used Gold Medal flour for the first time (switched over after I read the thread about KA prices...)

Is this possible? A completely different cookie based on flour alone? I presume that the amount of oatmeal is not going to effect the texture that much. What do you think?

I'm sure it's possible that the flour has something to do with it -- different protein percentages, and what-not. You didn't by any chance get self-rising by mistake? I did that once....

Since you weren't paying close attention to the flour is it possible that you over measured your leavener(s)?

I'm sure that I used AP flour vs. self rising. I don't think I overmeasured but it is highly conceivable that I screwed up the baking soda and baking powder. And since I always get confused about the difference between them... well they taste good in any event. Just not my best batch!
