View Full Version : Need recipe for 1" boneless pork chops

I am feeling uninspired, any good easy recipies to share?

Saute your lovely chop on a heavy cast iron skillet (for the fond - teflon doesn't create those lovely caramelized sticky bits). WHen sauteed to your liking, remove to warm plate. In same skillet, saute a small minced shallot (adding a touch of oil if necessary). When softened, degaze pan w/ a couple tbsp of vermouth or white wine. Evaporate. Add a quarter cup of chicken stock or so, a generous spoonful of apricot jam, salt and pepper - simmer til reduced to your liking. And you're in!

THat's what I get for not taking time to read more carefully. You asked for 1" chop recipes.

Dolores, that does sound yummy and so easy, Because of the thickness Do you think I could finish it the oven? Or maybe I brown it, then in the oven and then back on the stove to do the sauce.
