Please help me!!!
tacos or taco salad were the first things that popped into my mind - if you have the fixings they are really quick.

My mother-in-law makes a great sloppy joe. She browns ground beef, adds ketchup, salsa, chopped onion, a little brown sugar, and maybe some green pepper if she has some (no measurements--she just throws it together and keeps tasting it until it's right). Serve on some hamburger buns, and voila! Yummy. She calls is barbeque, but I grew up calling this dish sloppy joes.

I think of Chili - but it's so hot outside. (Maybe not where you are)Add onions, beans, tomatoes & spices - pretty easy as well. Tacos are always easy too if you have the fixings handy. Shepherd's pie maybe. Burgers on the grill is a good summer food too. Maybe meatloaf or stuffed peppers. Those might be too time consuming though.

Thanks so much for your responses! They all sound wonderful...I went in to the kitchen to see if I had taco seasoning..4 envelopes! Guess tacos always seem like a good idea to me but I seem to forget to make them! I think I will make them tonight because I have all the ingredients! I will definitely try the others when I have rolls! I have misplaced my June issue..are there many ingredients? My favorite burger in the world is sauteed onion, mushroom and swiss..used to have bacon in college!Thanks again, hubby gets to eat tonight!

Here's the recipe from June '00 (pg. 166)that christinew was talking about.
(30 minutes or less)
Open-faced Burgers with Onion-Mushroom Topping
Prep time: 10 minutes
Cooking time: 18 minutes
2 teaspoons olive oil
1 medium sweet onion, sliced and separated into rings
2 (8-ounce) packages presliced mushrooms
1/2 teaspoon salt
2 teaspoons balsamic vinegar
1 1/2 tablespoons paprika
1/2 teaspoon salt
1/2 teaspoon dried thyme
1/4 teaspoon ground red pepper
1/4 teaspoon freshly ground black pepper
1 pound ground round
2 English muffins, split and toasted
1. Preheat grill.
2. Heat oil in a large nonstick skillet over medium-high heat. Add onion and cook for 5 minutes or until golden. Add mushrooms and salt; cook 5 minutes, stirring constantly. Add vinegar; remove mixture from pan. Set aside.
3. Combine the paprika and the next 4 ingredients (paprika through black pepper). Divide the ground round into 4 equal portions, shaping each into a 1/2-inch thick patty. Coat patties with spice mixture. Grill patties 4 minutes on each side or until done. Place burgers on muffin halves, and top each burger with 1/4 cup onion mixture.
Yield: 4 servings
(serving size: 1 sandwich)

Ha Kathy, you sound like me! I have about 4 whole taco kits in the cabinet. I believe we will have tacos tonight, after I read your post yesterday, but those open face burgers sound really good (minus the mushrooms for me!) Thanks for posting, Shirley!

the recipe hirle posted about Open Faced Burgers With Onion Mushroom Topping is a real good recipe. I have made it a good number of times here and it always goes over just fine.
Another Recipe I like is what I call a Greek Fajita.
1 lb ground beef
1 small diced onion

I hit the tab key and got kicked out b-4 finishing the recipe. So I'll try again.
Greek Fajita
1 lb hamburger
1 small onion, diced
1/4 cup beef broth
1 Tablespoon Oregano
1 1/2 teaspoon garlic, minced
4 large flour tortillas ( or pita)
2 oz feta cheese, crumbled
1 large tomato, diced
1/4 cup black olives, sliced
Brown the hamburger & drain off excess fat.
Add Garlin & Onion & cook for 5 minutes longer. Add Broth & oregano & reduce slightly. Place some of the meat in the center of a tortilla sprinkle on some cheese, tomato, & olives. Fold in the ends of the tortilla and roll up to eat.
Can be eaten like a sandwich.

Just another idea for a quick use of a pound of ground beef, and it's pretty good.

Yes I think ground Turkey will work, and I know ground lamb will work just fine. If you want it to be like a Greek Wrap I'd recommend ground Lamb. http://www.cookinglight.com/bbs/wink.gif

Now, if we're talking turkey, I'll throw in my two cents. Please see the thread having to do with turkey burgets for my turkey cornmeal salsa whatevers. Then, there's this one, which is one of my all-time favorites (however, you've got to like cilantro to make it...)
TURKEY MEATBALLS WITH SPAGHETTI
2 cans (1 lb 12 oz) crushed tomatoes (or whole, undrained tomatoes cut into one-inch chunks)
3 tablespoons olive oil
2 teaspoons garlic, finely minced
2 tablespoons chili powder
1 pound ground turkey
1/2 teaspoon crushed hot pepper flakes
1/3 cup FRESH breadcrumbs
2 tablespoons milk
1 large egg, beaten
1/2 cup finely chopped cilantro or less (I may use between 1/4 and 1/3 cup. Do not cut out cilantro entirely or the dish is lost!)
freshly ground pepper
Spaghetti
Cook tomatoes in saucepan, uncovered over medium heat about 20 minutes. Meanwhile, heat 2 tablespoons of oil and briefly cook garlic without browning. Add chili powder andcook about 1 minutee to makea paste.
Put meat in bowl. Add half of chili paste. Add remaining chili pste and pepper flakes to tomatoes.
Soften bread crumbs in milk and add to turkey. Add egg and cilantro. Add generous grinding of pepper and blend well. Shape mixture into meatballs. Cook, stirring often, until browned all over. Add meatballs to sauce and cook for 15 minutes.
Serve over cooked spaghetti.
Serves 6
