Does anyone have a recipe for light baked beans? I have to attend a picnic and I have been assigned baked beans. I have an old standby but I am interested in a new light version.

I put them in a crockpot and ALWAYS claim as my own.

Here are two. The first is from Cooking Light, March 2000; the other is from a dinner club/block party we're participating in next month. Unfortunately, the second recipe doesn't come with number of servings or nutritional information; 15 slices of bacon is certainly not light, but we made it with only 2 or 3 slices & it came out good. This recipe seems to be some sort of "home concoction" that one of the other group members cooked up; it seems classic for great home cooking - make it up as you go along!:-D Nonetheless, can't beat either of these for simplicity.
BAKED TRIPLE-BEAN POT
1/3 cup packed brown sugar
1/4 cup ketchup
2 tablespoons Dijon mustard
1/8 teaspoon black pepper
1 (16-ounce) can baked beans
1 (16-ounce) can pinto beans, drained
1 (15.5-ounce) can butter or lima beans, drained
1. Preheat oven to 350 degrees.
2. Combine the first 4 ingredients in a 1 1/2-quart casserole. Stir in the beans. Cover casserole and bake at 350 for 40 minutes or until thoroughly heated. Yield: 10 servings (serving size: 1/2 cup).
Calories 151 (8% from fat); Fat 1.4g; protein 6.5g; carb 33.4g; fiber 5.3g; chol 0mg; iron 2.1 mg; sodium 576mg
SARGENT'S BAKED BEANS
1/3 cup brown sugar
1 tsp instant coffee
1 tsp vinegar
1 tsp dry mustard
15 slices bacon
1 tsp salt
Chopped onion
2 20-oz cans baked beans
1/2 cup crushed pineapple
Cognac to taste
Mix brown sugar, coffee, 1/2 cup water, pineapple, vinegar, mustard, and salt in a pan.
Cook 5 minutes on low. Saute onion and bacon, pour into beans, cover and bake for 45 minutes. Add cognac and bake 35 minutes without cover.

I like Kristi's suggestion! Those Bush's vegetarian beans are really tasty! I think about making "my own" baked beans, but the probably wouldn't turn out as good as Bush's!
