YUMMY! I'm munching while I type.
This is timely as we are eating wheat-free, dairy-free while exploring DD's possible food allergies.
Modifications: did not rinse and drain barley (seemed unneccesary. Any idea why they include this step? Mine was like steamed rice! Perfect!)
Doubled the barley.
Halved the pepperoncini's -- for the family, topped my own dish with extras!!
This would be a great dish-to-pass, and could really take almost any veggies. I'm going to chop up and add some of my MANY zucchini!!
