Thanks for the great recipe! I made it for our "Cousin Fest" get together. I added portobella mushrooms to help control the cost of the meal and to "beef" it up a little, and fresh tomatoes because 'tis the season. I had never made polenta before and now I am addicted. Everyone appreciated the vegetarian meal and everyone raved about how good it was. Given that there were 15 to feed and I didn't want to spend the entire day in the kitchen, this was a perfect and delicious solution.
