I have an abundance of peaches - a gracious delivery of my parents http://www.cookinglight.com/bbs/smile.gif). My husband and I are eating them constantly - they're absolutely delicious...juice running through your fingers......

It would be a shame for ANY of them to go to waste.

What is the best way to freeze them? Can I keep the skins on?

I had this same situation last week and posted under Peaches Recipes-july 99. Check out that post for some ideas. Also, I froze lots of them -- I put x on tops and bottoms, then put in boiling water for 30 seconds and immediately put in ice cold water - this way of peeling them is a snap - then cut up and freeze just as is. I had done this before and it works great for putting them in recipes later. Enjoy-it's great to have them in season.
