View Full Version : Dinner advice for tonight - Tenderloin "Scraps"

I bought a whole tenderloin on sale and had it cut up into filets, freezing the extras. Now, I have some small bits and two filets that I'm marinating in teriyaki sauce (as we speak...), and I'm wondering the best way to cook them. Any suggestions? I am a very infrequent red-meat-cooker. (Not too confident, either.)

I'll appreciate any help!

I would slice up and stir fry w/whatever veggies you have on hand - bell pepper, mushrooms, onion, broccoli, squash, whatever, and mix up a sauce of beef broth, dry sherry, ginger and cornstarch and the leftover terriyaki marinade. Serve over steamed rice.

Or, make them into K-Bobs and grill.

i love pork tenderloin. i usually marinate mine in a mixture of soy sauce, brown sugar, garlic, honey, scallions, sherry...

I second the vote for kabobs! I always put the meat on separate skewers, as well as putting the individual veggies on thier own skewers. This way you can put things on according to the length of cooking time (ie. cherry tomatoes take much less time than the meat or onion wedges. I always do whole cloves of garlic too. YUMMY!). If you use bamboo skewers, don't forget to soak them in water for at least half an hour!!
