I have one cooked pork tenderloin as well as several additional slices in my freezer. I'm looking for ideas on how to use this in a recipe or two!! Any thoughts?

This is the recipe I make with my left over pork scraps from either tenderloin or loin. Note that I also use a half of cabbage and slice myself because I don't like the taste of "packaged" salad mixes. Also, take time and make your own crepes. This stuff is addictive!!!

Mushu Pork

3/4 pound pork loin -- 1/8" strips
2 teaspoons peanut oil
1 small onion -- crecent slices
8 ounces mushroom -- sliced
1/2 teaspoon garlic -- minced
1/2 teaspoon ground ginger
1 bunch green onion -- sliced
16 ounces coleslaw mix
1/4 cup dry sherry
2 teaspoons cornstarch
1/4 cup soy sauce -- reduced sodium
2 teaspoons dark sesame oil
8 large crepes
hoisin sauce
Prepare all vegetables and set aside
Heat oil in wok or 12" skillet over medium high heat
Saute onion for one minute. Add pork and mushrooms and cook two minutes until mushrooms begin to release their juices. Add garlic, ginger, coleslaw mix. Stir in scallions.
Combine sherry and cornstarch. Add to skillet along with soy sauce, sesame oil and one tablespoon hoisin sauce. Stir and cook until thickened
Serve with hoisin sauce on side and crepes which have been heated in plastic wrap in the microwave until hot.
To freeze: Transfer mixture to containers and cool and freeze, or spread some hoisin sauce on crepe, add mushu and roll. Place in desired containers and freeze. Heat in microwave.
To serve, spread a small amount of hoisin sauce on crepe, add mushu and roll.

Serving Ideas : Serve with Basic Crepes #1.
NOTES : Prepare and measure everything first. The cooking process takes less than 10 minutes. I don't like sasame oil, so I only added a drop. Once cabbage is added, do not let the mixture cook, you want to keep the cabbage crispy.
This is a delicious dish.
