View Full Version : Quickie Challenge: Best Tuna Steak Recipe

OK folks: 45 minutes or less- I'll check back at about 5:30 (Eastern). I bought some great tuna steak thinking of making Gail's Canoehouse Tuna but am missing some ingredients. Any OTHER favorite tuna steak recipes?

Here is one I posted on another thread, and it is great for tuna as well as halibut. In fact I like it better with tuna. You can grill or broil it. Very basic and yummy!
These are from a Sunset Mag Ultimate Grill book:

Grilled Soy-Lemon Halibut

1 tablespooons butter or margarine, melted (the recipe calls for 2 tblsp, but I use just 1 tblsp and it is still great)
3 Tblsp soy sauce
2 Tblsp lemon juice
1 Tblsp each sugar and Worcestershire
1 Tblsp minced fresh ginger
1 clove garlic, minced or pressed
1/8 teaspoon black pepper

4 halibut, shark, tuna, swordfish or sea bass steaks or fillets (about 1.5-2 lbs), cut about 1 inch thick
Lemon wedges

In a shallow dish, stir together marinade ingredients (everything but the fish) Add the fish and turn to coat. Refrigerate for 1 to 2 hours, turning fish several times. Place fish on a grill over a solid bed of hot coals, baste with marinade several times, turning once, until cooked through, 8 to 10 minutes. Serve with lemon wedges. Makes 4 servings.

BTW- you don't have to marinade it that long, I have done it for about 30 minutes and it is great. Just brush the marinade on while it cooks.

I have a fabulous one -- in fact, it's so good, it's the only way we make tuna anymore. (I made Gail's Canoehouse recipe, but used our tuna recipe and her recipe for the veggies).

Unfortunately, I don't have it at work with me. Basically, you mix up some olive oil, minced garlic, dried thyme, lemon rind, and crushed red pepper flakes (just a touch). Then, you salt & pepper the steaks and brush the oil mixture over them. Throw them on the grill, and while they're cooking, dump the leftover oil mixture into a small saucepan with some butter and fresh-squeezed lemon juice. When the steaks are done, drizzle the sauce over the top and serve. YUM.

could someone post gail's canoehouse recipe--i bought tuna steaks too, but the were "freshly" frozen, being in the midwest

AHI TUNA WITH VEGETABLE STIR-FRY (CANOEHOUSE)

6 servings
5 1/2 tablespoons oriental sesame oil [excuse me-- but is there some OTHER kind of sesame oil?]
4 cups very thinly sliced green cabbage (about 8 ounces) [funny he specifies the oriental oil but not
the variety of cabbage]
3 ounces fresh shiitake mushroooms, stemmed, caps sliced
1 small baby bok choy (about 3 ounces), very thinly sliced
1 large carrot (about 3 ounces), cut in matchstick-size strips
4 green onions, thinly sliced
6 tablespoons oyster sauce
3 1/2 tablespoons reduced-sodium soy sauce
3/4 cup chicken stock or canned low-salt chicken broth
1/4 cup (1/2 stick) butter
3 tablespoons rice vinegar
6 6-ounce ahi tuna steaks (each about 3/4 inch thick)
Black sesame seeds and white sesame seeds (optional)

Heat 2 tablespoons oil in heavy large skillet over medium-high heat. Add the cabbage, mushrooms, bok choy, carrot and green onions and stir-fry until vegetables are crisp-tender, about 3 minutes. Add 3 tablespoons oyster sauce and 3 tablespoons soy sauce; stir 1 minute to blend flavors. Season to taste with salt and pepper. Transfer vegetable mixture to medium bowl. To same skillet (do not clean) add 1/2 tablespoon oil, remaining 3 tablespoons oyster sauce, remaining 1/2 tablespoon soy sauce, stock butter and vinegar. Boil until sauce thickens, whisking occasionally, about 3 minutes. Season with salt and pepper. Keep warm.

Sprinkle tuna with salt and pepper. Heat remaining 3 tablespoons oil in another large skillet over high heat. Add 3 tuna steaks and cook to desired doneness, about 2 minutes per side for medium-rare. Transfer to small baking sheet. Repeat with remaining tuna.

Divide vegetables among 6 plates. Top with tuna. Ladle sauce around tuna. Sprinkle with sesame seeds, if desired.
