FYI... I just posted this on the Food part of this forum too!

HI!

I need your help. I am giving a short seminar at work tomorrow (I work in a corporate fitness center) on Baking w/ fruits and veggies and how to lighten up so many of these sweet recipes.

How do you lighten up baked goods? Do you sub egg whites, use applesauce??? Please send any tips you can.

Also, if you have any great fruit or veggie baked goods or dishes that you love please send those along too. I get all my recipes from here, but we didn't think we were going to be doing this seminar and now it is on as of today-so I need to think quick to pull some info together! I would great appreciate any thing you can send along!!!

Egg whites have only 15 or 16 calories. I would look some other place to cut calories.

I don't use substitutes to lighten recipes, but have found that most dishes will be fine after cutting back a bit of sugar & butter.

One of my very favorite, easy, satisfying, and low-guilt dishes to make is baked apples. Cut apple in half, core it. top with anything sweet & nutty. Then bake at 350. Wonderful dessert!

I think she means using egg whites instead of whole eggs. ;)

Honestly, I don't try to cut baking recipes. I either eat less or just plan it into my day/week. I've found some light recipes I like but most of the time I consider baking a splurge.

There is a new-ish show on Lifetime (I think) called "Cook Yourself Thin." They made a chocolate cake recently that used beets and they claimed it tasted great.

I haven't tried it yet but it looked interesting...
