Yummmy! And easy, too. I used 1 1/2 pounds of boneless, skinless chicken thighs instead of the pound of chicken breasts, 3/4 pound of thighs, and 3/4 pound of drumsticks. It definitely didn't make four servings, though, so keep that in mind if subbing all boneless meat. Oh, and I'd probably halve the saffron - it didn't need 1/4 teaspoon.
I served it with oven-roasted rosemary baby potatoes and a green bean stir-fry. I threw the potatoes in the oven, started cooking the chicken, and then took a break while the chicken simmered and the potatoes cooked. Then, just before the chicken and potatoes were done, I stir-fried the green beans. Delicious!
