We had this for dinner this evening. It takes a little time to prepare, and dirtied a lot of dishes... but it was very good! Pamesan, chicken, smoked ham, spinach, nutmeg & basil are the predominant flavors.
I made it as manicotti, but I think you could also layer the filling in a lasagna (it wouldn't be quite as time consuming to prepare).
The recipe is by Jim Fobel - one of my absolute favorite cookbook authors.
I couldn't find this one on the recipe finder site, so if anyone is interested in the recipe, but doesn't have CL from '99, let me know & I'd be happy to post for you.

The recipe looks great! I would love for you to post it. I bet you could use this dish as a make in advance dinner too.

Chicken-and-Spinach Manicotti
Filling
1 teaspoon olive oil
1 cup finely chopped onion (I used 1 medium - probably 1.5 cups)
1 large garlic clove, minced
2 1/2 cups finely chopped cooked chicken
3/4 cup finely chopped smoked ham (~1/4 pound)
1/2 cup (2 ounces) grated fresh Parmesan
1/2 teaspoon dried basil
1/4 teaspoon black pepper
1/8 teaspoon ground nutmeg
2 large egg whites
1 10 ounce package frozen chopped spinach, thawed, drained, and squeezed dry
Sauce
3 cups Chicken Stock
1/4 teaspoon salt
1/8 teaspoon ground nutmet
1/8 teaspoon black pepper
1/8 teaspoon ground red pepper
1/2 cup all-purpose flour
1 cup 2% reduced fat milk
1/2 cup grated fresh Parmesan
12 cooked manicotti (i used all 14 in the box)
Preheat oven to 375
To prepare filling, heat oil in a medium nonstick skillet over medium heat. Add onion; saute 5 minutes. Add garlic; saute 30 seconds. Combine onion mixture, chicken, and next 7 ingredients (chicken through spinach) in a medium bowl.
To prepare sauce, combine chicken stock and the next 4 ingredients (stock through ground red pepper) in a medium saucepan; bring to a boil. Lightly spoon fklour into a dry measuring cup; level with a knife. Place flour in a small bowl; gradually add milk, stirring with a whisk until belnded. Add to pan; bring to a boil.; Cook 2 minutes or until thick, stirring constantly with a whisk. Stir 1 cup sauce into the chicken mixture. Ad 1/2 cup cheese to the sauce and stir to blend.
Spoon chicken mixture into cooked manicotti (~1/3 cup per manicotti). Arrange stuffed manicottie in a 13x9 baking dish coated with cooking spray. Pour cheese sauce over. Bake at 3765 for 45 minutes or until browed and bull by. Yield: 6 servings. Serving size: 2 manicotti.
Calories 460 (26% from fat), Fat 13.2G (sat 5.5g, mono 4.4g, poly 1.9g); protein 39.7g, carb 43.8g, fiber 3.2g, chol 83g, sodium 998 mg.
