View Full Version : Easy Greek Chicken Casserole Aug 2000!?!?

Has anyone made the recipe from Aug 2000 on page 107? It is the Greek Chicken dish. I am now cooking it and wondering how it is going to turn out and I am a bit concerned.

OK we just ate it and my potatoes did not cook enough..HELP

I may not have cut up the potatoes small enough? Not as yummy as it looks or I really did a number on it. The green beans I used were fresh and they had a weird texture, but I've never been great with fresh grean beans.

When I read the recipe, it seemed to me that there was an awful lot of thyme for the proportion of other flavors. Could this have been one of the problems? Dried thyme can be overpowering in large amounts.

Has anyone else tried this recipe yet? It looks as though it ought to be good.

Phoebe....good point about the thyme http://www.cookinglight.com/bbs/eek.gif. Also the amount of anchovy paste was a bit much. My problem is with the beans and potatoes. I believe I did not cook either one correctly before baking! If you try this recipe please let me know how it is for you http://www.cookinglight.com/bbs/smile.gif

I am making my grocery list out for the week and the chicken casserole is on my list. I will let you know how it goes. I ,too, hope it works because it looks pretty darn good!

Made the Greek Chicken Casserole tonight and we loved it! I did cut the potatoes fairly small and sauteed them for about 12 minutes instead of 8. I did use the 2 Tblsps of Thyme but cutback to about 1 tsp of anchovy paste and added 3tblsps of black olives. I cooked for closer to an hour than 45 minutes. Only one pan to clean up! Perfect for several people and the portion size is large.

I just made the Easy Greek Chicken Casserole tonight. The taste was great but the potatoes were not soft and the green beans were very crunchy. I followed kvrooman suggestions to cook potatoes longer and to bake it longer. I would like to try it again but I'm not sure what to do to correct this problem.

I made this one last week and we loved it! You definitely need to use small red potatoes and cut them small! As for the green beans, I thought it was great that they maintained some crunch - nothing worse than a soggy green bean! Also, it made a huge amount which was great for leftovers all week!
