View Full Version : Question About Orzo Salad Recipe

I'd like to make this salad with a few additions. Do you think that grilled eggplant, zucchini and some roasted red peppers would go well in this recipe? Would I need to add anything? I don't think I'd use quite that much oil, though.

Orzo, Pine Nut, and Feta Salad
from: Epicurious

1 pound orzo
3 tablespoons fresh lemon juice
1/2 cup olive oil
1/2 cup pine nuts, toasted
1 1/4 cups feta (6 ounces), crumbled
1 cup thinly sliced scallion greens

PreparationCook orzo in a 6- to 8-quart pot of boiling salted water until tender, then drain well in a colander.

Whisk together lemon juice, oil, and salt and pepper to taste in a large bowl, then add hot orzo and toss. Cool orzo, then toss with pine nuts, feta, and scallion greens. Season with salt and pepper.

Absolutely. I have a BC recipe for Orzo Salad with Roasted Vegetables and it is wonderful.

Yep! There's also a BC recipe that calls for roasted shrimp in a similar salad. Delicious.

It's excellent but I do not add the 2 teaspoons of salt. There is plenty in the feta, IMO and it was way too salty with so much more added. Test it out before you add!

I'd use more like 1 or 2 tablespoons of oil.

HI 615bride.

Ina specifically asks for KOSHER salt in her savory recipes (as far as I can tell) ..which is less salty due to the fact kosher is a coarse salt.

When asked for kosher salt, make sure you use kosher... or use half the amount in sea or table salt.
