I just wanted to thank Lorilei and Schuh for great recipes...both can be found on the search which is what I did when I was bored at work last Friday.
So glad I did!
First was the Spinach Feta Pizza...yummm. Only a little tweaking here ;) I sauteed shallots and mushrooms with the garlic before adding the spinach. I also added a bit of turmeric and lemon pepper to the mix. The sundried tomatoes and feta really made this though...delicious even for my meat loving husband!

Next is Lorilei's recipe for Chicken breasts stuffed with goat cheese and sun dried tomatoes. YUMMM!!!!! Lots of terrific tangy ingredients all in one! This was two stars and a smiley face which is my highest rating thus far...easy, delicious, impressive looking and easy to modify. I only tweaked a little ;)
First off I decided it was too hot to bake so I flash fryed it with just a tad of cooking spray. I prepared the chicken ahead of time and right before frying sprinkled the breasts with salt and pepper and then seasoned bread crumbs (I eliminated the dipping in egg and rolling in bread crumbs).
I cut back on the butter in the sauce as well and added some thyme.
It was excellent! I served this with fresh string beans steamed in lemon and wild rice.
