View Full Version : Hatch Chile oops!

I was at Central Market yesterday and accidentally picked up a bag of hot roasted hatch chiles, instead of the mild ones. Used some in a frittata recipe this morning and wow! they are hot! Now I don't know what to do. Is there a way to make them milder? Do I just use a smaller amount than called for in the recipe? I am thinking I will use them in burgers and perhaps freeze some for stews and soups when (and if) it ever cools off here in Texas!

I saw the title and I thought "How on earth can Hatch chile be an oops?". I went to college just a few miles south of Hatch so I love me some Hatch chile. You can mix it with mild in recipes to mellow it out a bit, add it to soups and stews and in some cases use less. Or just do like roommates in college did, cook with it and eat it so your tolerance goes up. We traded dinner nights and they always bought the extra hot. I was so poor I couldn't afford to make my own meal that night so it was eat it or don't eat at all. :p
