The recipe for Easy Coconut Cake calls for the "famous coconut cream cheese frosting", but fail to provide the recipe. I was also unable to find it in a search of "frosting." Is there anyone that can help? Thanks.

The recipe is on CL's recipe finder. And Tamara, I see what you mean about no recipe for the coconut cream-cheese frosting. I would email Maelynn Cheung, the BB administrator -- maybe she can track it down for us!

The recipe is in CL Annual Recipes 1999 and is part of recipe for Easy Coconut Cake. (page 88). If you want the recipe for the Easy Coconut Cake, let me know and I will type out for you.
Coconut-Cream Cheese Frosting
6 ounces 1/3-less-fat block-style cream cheese (Neufchatel), softened
1 teaspoon vanilla extract
3 cups sifted powdered sugar
1/4 cup flaked sweetened coconut
Beat cream cheese and vanilla at high speed of a mixer until creamy. Graducally add sugar, beating at low speed until well-blended. Stir in coconut. Yield: 1/3/4 cups.

Easy Coconut Cake
Cooking spray
1 tablespoon all-purpose flour
1 (18.25 ounce) package light white cake mix
1 cup low-fat buttermilk
1/4 cup vegetable oil
1 teaspoon coconut extract
2 large egg whites
1 large egg
1/4 cup flaked sweetened coconut
1/4 cup packed light brown sugar
Coconut-Cream Cheese Frosting
Preheat oven to 350º. Coat a 13 x 9 inch baking pan with cooking spray; dust with flour.
Combine cake mix and next 5 ingredients; beat at low speed of a mixer 30 seconds. Beat at medium speed 2 minutes. Pour half of batter into prepared pan. Sprinkle with flaked coconut and brown sugar; top with remaining batter. Bake at 350º for 30 minutes or until a woodenpick inserted in center comes out clean. Cool cake completely in pan. Spread Coconut-Cream Cheese Frosting over top of cake. Yield: 18 servings.

THANK YOU, MAMASUE!!!!!!!! Have you ever made a layer cake in round cakepans with this recipe? I was wondering how a pineapple filling would go in between the layers. Just a thought.

Cathy....I haven't made this cake but from experience with cakes and cake mixes, you should have no problem using round layer cake pans. Just check the time...it may take less time. I think that the pineapple filling would complement this cake and sounds awesome! Let us know how it comes out. :D
