View Full Version : Ciabatta Bread & Buns

Does anyone have a TNT recipe for Ciabatta? Some of the recipes I have seen start with a biga and some do not. Which is best?

I know that Ciabatta bread is a rustic irregular loaf of bread but the Ciabatta buns I have been buying are square and uniformly shaped. Can this only be done commerically, or is there a special knack one must learn to make the buns successfully at home?

Ciabatta buns are the most perfect burger buns I have ever eaten! They make regular hamburger buns taste like fluff. The nooks and crannies are perfect for roasted Mediterranean vegetable sandwiches. Cinnamon toast made with Ciabatta buns is a whole new taste experience!

Do you get the impression that I REALLY like them - totally?

My DH makes fabulous Ciabatta, but it's from "Artisan Bread in Five Minutes a Day." Kind of hard to give the recipe -- it's more like a process. It doesn't get any better than this, though.

There is a great bread making blog I subscribe to called The fresh loaf http://www.thefreshloaf.com/. There you will find a recipe that I have tried for ciabatta bread - it's fairly simple but you have to remember this is a very, very wet dough and not easy to work with.
