I made these over the weekend and had a problem with the dough. It was dry/crumbly and hard to work with. I tried it twice with no luck. Anyone else have this problem?

Thanks for bringing that recipe to my attention, a great change from wonton cups.
I think if you add a little more water to the dough it should solve this problem.

I made a variation of these this past weekend. I did not make the cups, instead, I used pre-made phyllo cups. However, I found the shrimp salad to be incredibly bland and really boring. I ended up adding a whole plethora of other ingredients and seasonings just to make it passable. I would not make this again, and am sorry I didn't opt for Greek flavors instead.
