i finally made these, i think from the aug 01 issue. my DH & 10yr old daughter said they were a keeper, they were shocked they were CL--i have to tell them afterwards or i don't think i would get an accurate review!!!

i made a few changes, not much, but i found canned tomatillos, they weren't whole so i didn't have to put the sauce thru the food processor, used reduced fat mojack cheese & skim milk instead of 2%, & i used 2 egg whites instead of egg sub. i would definately watch the cooking time--i over cooked them so it wasn't saucy.

the one problem i had, anyone else have this too?, i couldn't fit the whole 1/2c of filling in the tortillas? i ended up using 10 tortillas instead of 8.

Thanks for reviewing this recipe. I have wanted to try these enchiladas but wondered about the recipe, since it is quite unlike other enchiladas I have made. I will definitely give them a try.

My family loved these!!!! I was a little disapointed with the consistency, however. The corn tortillas turned to mush. I used salsa verde instead of canned tomitillos, could that have been why? Maybe next time I won't dip them in water before I roll them. Regardless, the flavor was spectacular. I'd highly recommend this to anyone who need to cook for a crowd - it makes quite a few servings.

i bought the white corn tortillas, i'm not a big fan of corn, but these i like. next time i think i would warm them in the micro instead of dipping them in water-they got really gummy. the salsa verde is tomatillos, that is what i used & didn't really have to use the food processor.

while i made it w/ 10 tortillas instead of 8, it served my family of 3-w/o leftovers. i only served these w/ steamed rice, maybe that is why. either that or we are just pigs!;)

Thanks Tammy/MN for replying.. I'm not a big fan of corn tortillas either, but used them anyway. Next time I will use flour and see what happens. I might also use some chopped red pepper as this is a very GREEN dish :)

I too would soften the tortillas in the microwave. I have done that successfully many times. The water method sounds unnecessarily cumbersome and messy.

I'm not a big fan of corn tortillas (unless they are homemade). I used a small flour tortilla and was very impressed with the results and no dipping in water was needed.

i thought I posted but maybe I didn't. I thought these were plain jane. Simple but not enough flavor. Maybe it's a Texas thing...

My husband and I really liked these. I also made a few of my own modifications: I used a part of a rotisserie chicken that I bought at Costco and just shredded the meat with two forks, and skipped the chicken simmering step; I added some shredded carrots and roasted red peppers to the chicken filling; I used a roasted tomatillo salsa(Rick Bayless's from Fresh Fields); I used skim milk instead of 2% since this is what I had;and I used flour tortillas since my husband and I both hate the corn tortillas.

I think they would have been way too mild if I had found plain canned tomatillos. The salsa gave it a nice "mild" kick. It could have taken a little more, but it was very tasty with the salsa. I did not experience any "gumminess" with the flour tortillas(I did not soak them before filling), and I thought the amount of sauce was just right. (The jar of salsa was slightly larger than the canned tomatillos called for, and I used the whole jar.) I will definetely make these again. Perhaps, a little more cheese, cilantro, and spices next time.
