Saw thia in the LA Times a few weeks ago and just made it tonight. It is really good and with 2 fat grams and no cholesteraol, I'll be making it again soon.

Black devil's food cake

Vegetable oil spray
2 cups flour plus flour for dusting pan
1 3/4 cups sugar
1/2 cup unsweetened cocoa powder
1 tablespoon baking soda
2/3 cup unsweetened apple sauce
1 cupo fat free or low fat buttermilk
2 tablespoons vegetable oil
1 cup strong coffee

Preheat oven to 350.

Spray 13x9x2 pan with vegetable oil spray. Dust with flour; shake off excess.

In large mixing bowl, sift together flour, sugar, cocoa powder and baking soda. Whisk in applesauce, buttermilk and vegetable oil.

In small saucepan, bring coffee to a boil over medium high heat. Stir gently into batter. Mixture will be soupy. Pour into pan.

Bake for 35 to 40 minutes, or until a toothpick inserted in center comes out clean. Serve warm or let cool completely.

Makes 20 servings

Per serving: 140 calories; 2 grams fat; no cholesterol; 202 milligrams sodium; 30 grams carbohydrates; 1 gram fiber; 2 grams protein.

MrsReber -- You could certainly use those coffee bags. In fact, my advice would be to use 2 bags to brew your cup of coffee (will give you better flavor).

Thanks Lorilei- I am clueless when it comes to coffee! Sounds like this cake could use some kind of light frosting or sauce or something. I'll have to give that some thought. It'll up the calories and fat, but there's not much in it to begin with.

Mary, this sounds really good, but I have a question. I am not a coffee drinker and I really don't have a clue about coffee at all. I am assuming that one cup strong coffee is brewed coffee? Do you think I could use one of those individual coffee bags- (they look just like teabags, only they're coffe- my husband uses them on camping trips). I can't believe how few calories this cake has and I'd like to give it a try.

Susan, I'm a coffee drinker but I don't make it often at home. So, for recipe's etc., I keep a jar of instant on hand. A small jar will last a long time.

Although we polished this off without any frosting I thought of that too. Given the moist texture I would suggest just a simple side of Kool Whip - reduced or nonfat would work. (And if you want to do everything from scratch then some egg whites whipped up with sugar - but as I have two little ones "from scratch" is sometimes a fluid term.) http://www.cookinglight.com/bbs/biggrin.gif
