View Full Version : White vs. yellow cornmeal?

I was at the store last night and bought cornmeal for the baked catfish recipe from the Aug. '01 issue. I accidentally bought white cornmeal instead of yellow, only to discover I already had a near-full container of the white at home. My question is -- Should I return it? Or can I use the white the same as the yellow? Is there any difference between them other than color?

I haven't found any difference aside from color. I always looked for the yellow cornmeal because it had my favorite recipe for spoon bread on it. I finally got myself in gear and wrote the recipe down, so now it really doesn't matter.

Technically, there should be no difference besides the color... the same goes for my favorite :) BLUE Cornmeal...

Your main difference when looking at cornmeal will be between stone ground (with more hull) and regular ground cornmeal (which is generally finer, with less "substance")...
