Does anyone out there have a good recipe for a raspberry vinaigrette. I would love to know how to make it!!!!:)

Hi!

I've been making a raspberry vinegarette-"ish" dressing that I absolutely LOVE for some time now. It's actually taken from a favorite restaurant in Michigan......it's their house dressing served on their "Martha's Vineyard" salad.

1/2 cup Vegetable Oil
1/2 cup Light Olive Oil
1/2 cup Raspberry Vinegar
1/2 cup Maple Syrup
2 tbls. Dijon Mustard
2 tbls. Tarragon

Mix all ingredients together and shake well.

I've found that the better quality maple syrups work the best, however, you can use something like Log Cabin and other brands in a pinch.

I found this recipe in our newspaper. Take 1/4 cup of seedless raspberry jam and melt over low heat. Whisk in 1/4 c. red wine vinegar. Add salt and pepper. I like to have this over romaine and strawberries.
