It's that time again... I need some inspiration before I head to the grocery this afternoon. Hopefully your ideas will give me some. I'm hoping for something that's under an hour to prepare, yummy, and liked by all.... We might have dinner guests, so I want to make sure we're not starying too far from their tastes.

Is seafood too questionable for your dinner guests? I made Citrus Scallops from the CL recipe finder last night. My DH and brother loved them. They're so easy to prepare!

I made the scallop and shrimp kebobs from the CL August issue last night and they were wonderful!!!! Definite repeat! We did need to grill them longer than the first 3 minutes called for before turning though.

I got some chicken sausages with apple the other day and I plan on cooking them with some peppers, tomatoes, onions, and maybe some plums I have no idea how this will taste though! Maybe I'll add some soy sauce? I don't know.

I'm not sure if it's quick enough, but I'm making the Stuffed Florentine Shells fron the August issue, a tossed salad, and maybe some bead (foccacia?) if I make it to the store. Then just some cantaloupe for dessert-I got a beautiful one at the farmer's market yesterday.

Take out sushi and homeade blueberry pie for me- not much help on the dinner front, but I forgot how easy pie is to make when you buy the crust!

Will it surprise anyone to learn that I'm making beans tonight? :p I plan on flavoring them Mexican style this time: onion, garlic, salt, chipotle and ancho peppers (ground), oregano (Mexican), cumin, cilantro, cocoa powder, and a splash of vinegar. (I have a feeling I've left out something, but when I season, I work by muscle memory rather than a list.;))

Along with the beans, I'll have brown rice (mixed with black pearl barley), steamed Lacinato kale with garlic, roasted zucchini and red peppers, and maybe a few celery-and-carrot sticks for "coolth." For dessert, a peach or some grapes, and maybe a Carr's water cracker smeared with honeysuckle honey.

I hate when we do these menus; they always make me hungry 'way before dinner time!:mad:

I'm planning on making the peanut sauce from a reader recipe last fall (a chicken with soba noodles recipe I think) and pouring it over some jasmine rice. I'm adding a red bell pepper I just bought from the farmer's market that takes place across the street from my office every Thursday (love that!), green onions, carrots, and bean sprouts that I have at home. I just love peanut sauce, and it is so quick to make. I just stir fry the veggies while the rice cooks and I have a nice, quick dinner!

I was thinking ahead!! I made some casseroles and put them in the freezer because I knew I'd be needing them when I returned to work. Tonight it's chicken enchilada casserole from the CL Complete cookbook. I hope it's good, this is the first time making this one!

I'm doing either gnocchi with leek-ricotta sauce or spinach gnocchi with Gorgonzola sauce -- haven't decided yet. Serving it with a either a spinach or Romaine salad with olives, tomatoes, cucumber, vinaigrette -- haven't decided that yet, either. Going out to play trivia, beer for dessert. Probably Bass :D

I'm trying for the first time the Chicken thighs with prosciutto and tomatoes from May CL. I plan on using ham instead of prociutto. I can't decide whether to use fresh or canned tomatoes. I've been reading prior reviews and people had luck with both. Hope this is good!

We are doing leftovers of the Sante Fe Chicken (from another recent thread) which was very good. Actually, since SO already tagged the leftovers....I am going to make some more of the corn/bean mixture and have it over rice.

Last night, we had Pasta with Prosciutto and Peas (CL June 01). It's fast, easy, and delicious. Tonight, it's leftovers for us.

tonight I am making the vermicelli stir fry with peanut sauce (which is the best peanut sauce recipe CL has ever done IMO) and the spicy cucumbers with peanuts. Dessert is likely to be an apple brown betty simply because I have been craving it recently.

Emily can you PLEASE post the Leek-Ricotta Sauce recipie? I have leeks in the fridge and was wondering what to do with them.

Hi,

We're having burritos tonight. I make an easy, somewhat pedestrian filling out of 1 pound ground turkey,(lean ground beef would work too) chopped red and green bell pepper,and onion. I brown it in a sauté pan. Add 1T of good chili powder, 1t ground cumin (Penzey's). Sauté another minute or so. I add 1 cup of my favorite salsa. (If I have homemade, I use it, other wise I buy a good brand.) Let it simmer until bubbly.

I serve it in flour tortillas with refried beans, cheese, avacado, shredded lettuce, Low fat sour cream. I usually serve it with a side of rice.

That's it!

I'm going out to dinner tonight w/ the whole (extended) family...so nothing exciting here. :) I did make some delicious curried veggies for lunch though.

Ok, ok... so you convinced me on the scallops. I bought some thinking of the kebabs or the citrus recipes....

But I cruised through my Complete cooking light and found a recipe for shrimp arrabiata that sounds so yummy to me. Do you think I could substitute scallops for the shrimp? Or is a red sauce too heavy for them?

Help!

I'm having the Greek Salad with Grilled Chicken from I believe the July, 2001 issue. DD will have some romaine, cucumbers, olives and if I'm lucky, she'll eat a little bit of the chicken. The kid loves her veggies, but as for meat - the jury is still out.

I got a phone call and think that DH will be making a surprise early visit home tonight (he's home for the weekend) instead of getting in tomorrow. I don't have to fix him dinner since the ship won't get in until around 7:00.

Tonight i made chicken breasts in a Dijon sauce, brown rice and rattouille{?}. The chicken recipe came from Best Kept secrets of Healthy Cooking. The sauce was very good. Vicky
