View Full Version : Purple Potatoes?
I have recently discovered purple potatoes in my local supermarket. Has anyone ever used them before? Is there anything special to know about them (how to cook them, taste)? Any help would be appreciated.

(Yes I've used 'em, no they don't need any special instructions.) Somewhere on this board I believe I posted a recipe for Potatoes Savoyarde and the purple potatoes were one of the ingredients.

Yes purple potatoes are used in Peruvian cuisine. Papas moradas. You can use them to make potato salad, potato chips etc.
I believe the 2 chefs from Hot Tamales Milliken & Ferigan(not on tv anymore) used to cook with purple potatoes. You can make a potato salad with a vinagreite dressing. Or combine different potatoes in a salad like a tri colr salad for variety.

As Gail says (she is so smart) they are pretty much the same as other potatoes. Cooked the same, etc. I recall that they have more of a yukon gold-type rich flavor thank the plain idaho spuds, but not that different. I mainly use them because the color looks cool,.... uh, dude.
Purple potatoes are great. They're particulary good, along with small white rose potatoes, drizzled with a little olive oil, rolled around in some dried spices (salt, thyme, oregano) and baked. I've served them along with roasted chicken to add some color.
Of course, they look blue to the color blind.
