Just wanted to share a recipe that we really love (we have it once a week!). This makes enough for two.

Tequila Lime Chicken

1 Jumbo Chicken Breast
1 can black beans drained
1 can Mexican style corn undrained
cajun seasoning
garlic (as much as you like!)
salt & pepper
fresh lime
tequila (few tablespoons...no exact amount)

Dice chicken into small bite size pieces. Season with cajun seasoning salt and pepper.
Chop garlic. Place tiny amount of oil in pan
and add garlic when it gets hot. Let garlic cook a couple of minutes then add chicken. When chicken is no longer pink add drained beans and corn, lime and tequila. You can also add a little more cajun season if you like. Cook over medium high heat until most of liquid has evaporated. Serve over rice with a lime wedge. DELICIOUS!!! There really isn't exact amounts for this stuff so make changes as you go. Sometimes I like more chicken, sometimes less and sometimes no chicken at all!!! Enjoy!

Hope you guys like it! I think I'll try the Tequila Lime chicken from epicurious tomorrow night. Margaritas are a great addition thanks for the idea!

Thanks marshalynne, this looks yummy! Since I have all the ingredients in my house (except the tequila), I just might make for dinner tonight. I just have to stop at the local liquor store and get a big bottle of tequila. Might as well have margaritas with dinner as well!!
