View Full Version : Excellent Fettucine recipe

I could have sworn this was a CL recipe from quite a few years ago, but maybe it isn't. I use Schilling Mesquite seasoning on the chicken and grill it in my grill pan. When I have made this for company, they LOVE it!

Southwestern Fettucine

Amount Measure Ingredient -- Preparation Method

12 ounces fettucine -- cooked and drained
1 can(15 oz) cream-style corn
2/3 cup skim milk
1 tablespoon oil
1 teaspoon cumin
1 onion -- chopped
1 red bell pepper -- cut in strips
1 can corn -- drained
1 cup(4 oz) pepper-jack cheese -- shredded
1/4 cup cilantro -- chopped

4 mesquite chicken breasts -- grilled and sliced
salsa

Puree the cream-style corn and the milk in a blender; set aside. Saute the onion, bell pepper, and cumin in oil until the onion is soft. Add the cream-style corn, the whole kernel corn, and the cheese to the onion and bell pepper; heat until the cheese is melted. Add the cilantro and the pasta; toss together. Place the fettucine and sauce on individual plates; top each serving with a sliced chicken breast and salsa.

Chrisi - this sounds SO good! I don't remember ever seeing it so thanks so much for posting it. YUM, YUM, YUM - I can't wait to try it!
