I am making this appetizer tomorrow night for my holiday dinner. It calls for a 13 to 16 ounce round of Brie Cheese. I could only find this size for about $25!!! SO, I bought (2) 7 ounce rounds of Brie. I called Pepperidge Farm and talked to someone who said it's okay to "stack the rounds because they will melt together. That I shouldn't just use 1 round which would equal 7 ounces because I'd have to adjust the whole recipe. SO do you think it is okay to stack the (2) 7 ounce rounds????

Can you cut one in half and place both halves next to the first whole one? I am not sure that I would put one on top of the other. I will be watching this thread.

HERE"S (http://www.foodnetwork.com/recipes/emeril-lagasse/brie-en-croute-with-caramel-and-walnuts-recipe/index.html) a recipe from Emerile Lagasse that uses an 8 oz round. Maybe you could use it to make 2?
Why not just make two, one with each 7 ounce round? Just split the other ingredients between them (you might end up having to use both sheets of puff pastry in the package, one for each round, if you can't get one wrapped with 1/2 a sheet.)
The 7 or so ounce size is a lot more common in our stores, too. The most reliable source I've found for a 1 pound round of brie is Costco.

I'm back, what about quartering both, then piece them together to make one? Wouldn't it melt together then? Trying to make it easier for you.

That's my inclination as well. It isn't really a recipe per se, but just a method for presenting the brie; there are countless variations on putting brie and nuts or chutneys together and wrapping with puff pastry, so I'd wing it.
If you do decide to stack the two, I'd add more of the jam and toasted nuts between the two layers for a pretty presentation.

A BIG Thank You to all! I have decided to make 2. I will just split the recipe in half. Like Candice said it is really not an exact recipe so I will do that. I'll post my review tomorrow:D
