View Full Version : Looking for a recipe for oven baked onion rings

I had some onion rings for the first time in years --- and they were soooo good.

I was wondering if anyone has a good recipe for onion rings that you bake in the oven.

Can you make decent onion rings (nice and crunchy) in the oven? Or, should I just move on. :D

I haven't tried these, but the latest Eating Well has a recipe for oven-baked onion rings. The blurb above the recipe says that they couldn't get enough of these crunchy onion rings in the Eating Well test kitchen. I would be happy to post the recipe, if you are interested.

I second the request for the recipe. I didn't even know I wanted onion rings until I saw this thread.:) I gave up on them years ago when I stopped eating deep-fried foods.

CL had zan awesome looking one some years back, in the issue swhere they redesigned diner food. it had the best article about those wonderful meat-and-three restaurants down South...

I am pretty sure the cover wasa cheeseburger along with the rings. I think that issue is also the one with the oven fried catfish and mac and cheese. Both of those are good.

Beer-Battered Onion Rings.

Unless for some unknown reason you have an open can of beer in your refrigerator, try this simple way to flatten the suds you need for this batter. Measure 1/2 cup beer in a small bowl, and stir with a fork. You're left with about 1/3 cup flat beer.

Yield: 4 servings (serving size: 4 onion rings and 1 tablespoon ketchup)


Ingredients
2 large onions, peeled (about 1 1/2 pounds)
2/3 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon freshly ground black pepper
1/3 cup flat beer
1 large egg white, lightly beaten
1 1/2 tablespoons vegetable oil, divided
Cooking spray
1/4 cup ketchup
Preparation
Preheat oven to 400°.

Cut the onion crosswise into 3/4-inch-thick slices, and separate into rings. Use 16 of the largest rings; reserve remaining onion for another use. Lightly spoon flour into a dry measuring cup; level with a knife. Combine flour, salt, paprika, and pepper in a medium bowl. Stir in beer and egg white (batter will be thick). Heat 1 1/2 teaspoons oil in a large nonstick skillet over medium-high heat. Dip 5 onion rings in batter, letting excess drip off. Add onion rings to pan; cook for 2 minutes on each side or until golden. Place the onion rings on a jelly-roll pan. Repeat procedure of dipping onion rings in batter and cooking in remaining oil, ending with 6 rings. Coat the onion rings with cooking spray. Bake at 400° for 10 minutes or until crisp. Serve rings with ketchup.

I don't keep beer in the house: can I make these with a different liquid? I know that beer batter rocks, but ya gotta do what ya gotta do.

Susan, I don't keep beer around either, but you can buy it by the bottle just for the recipe. That's what I've done on the rare occasions when I make a recipe calling for beer. If you're worried someone's going to drink the beer, you can just open it and let it go flat as soon as you get it home. ;)

Here is the Eating Well (Feb 2010) recipe!

Onion Rings

Makes: 6 servings, 6-7 onion rings each
Active time: 40 minutes; Total: 1 hour

We couldn't get enough of these crunchy onion rings in the Eating Well test kitchen. Try any seasoning blend that you have on hand to add flavor to the breading or substitute 1 tsp salt instead. Seasoned whole-wheat breadcrumbs are available in some supermarkets and natural-food stores. If you can find them, try them in place of plain breadcrumbs and seasoning blend.

2 medium yellow onions
3/4 cup all-purpose flour
2 tsp baking powder
3 large eggs
1 1/2 cups fine dry breadcrumbs, preferably whole-wheat
1 tbsp seasoning blend, such as cajun, jerk or Old Bay
Olive oil or canola oil cooking spray

1. Position racks in upper and lower thirds of oven; preheat to 450 F. Coat 2 large rimmed baking sheets with cooking spray.

2. Cut off both ends of each onion and peel. Slice into 1/2-inch thick slices; separate into rings. (Discard the smallest rings or reserve for another use). Place the rings in a medium bowl; cover with cold water.

3. Combine flour and baking powder in a shallow dish. Lightly beat eggs in another shallow dish. Combine breadcrumbs and seasoning in a third shallow dish. Working with one ring at a time, remove from the water, letting any excess drip off. Coat in flour, shaking off any excess. Dip in egg and let any excess drip off. Then coat in the breadcrumb mixture, shaking off any excess. Place on the prepared baking sheets. Generously coat the onion rings with cooking spray.

4. Bake for 10 minutes. Turn each onion ring over and return to the oven, switching the positions of the baking sheets. Continue baking until brown and very crispy, 8 to 10 minutes more.

Per serving: 175 calories; 4 g fat (1 g sat, 1 g mono); 79 mg cholesterol; 29 g carbohydrate; 0 g added sugars; 7 g protein; 2 g fiber; 557 mg sodium; 136 mg potassium.

•2 Vidalia onions
•2/3 cup buttermilk
•3/4 cup fine dry breadcrumbs

•Olive oil cooking spray

1.Preheat oven to 350°F. Lightly oil a baking sheet.
2.Cut onions into 1/2-inch rounds and separate into rings. Place in a bowl and toss with buttermilk. Combine breadcrumbs, salt and pepper in another bowl. Dredge onion rings in breadcrumbs and place on the prepared baking sheet. Lightly mist with olive oil cooking spray. Bake until lightly browned, about 25 minutes.

I made some a year or so ago, I THINK a CL recipe, and they were terrible. I was sad. So, I am happy to try the EW version!!!! LOVE onion rings!!!

I love these - I think they're from an Ellie Krieger cookbook -

Oven Baked Onion Rings

Ingredients
Cooking spray
4 cups baked potato chips
1/2 teaspoon cayenne
1 cup lowfat buttermilk
1/2 cup plus 2 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 to 2 large Vidalia onions, peeled
DIRECTIONS

Preheat the oven to 450 degrees F.

Spray a baking sheet slightly with oil and set aside. Place potato chips in the bowl of a food processor and process into crumbs, about 20 seconds. Transfer to a shallow bowl, add cayenne, and set aside. In another bowl, combine buttermilk, 2 tablespoons of flour, salt and pepper and set aside. Slice onions into 1/2-inch circles and separate into rings, keeping only large, whole rings (reserve rest of onions for other uses). You should come out with about 12 to 14 rings.

Place the remaining flour in a sealable plastic bag, then add onions, and shake to coat. Dip onions 1 at a time into the buttermilk mixture, then dip into potato chip crumbs and place on baking sheet. Spray canola oil evenly over rings and bake for 20 minutes, or until coating is crisp. Season with salt, to taste, and serve immediately.
