My son in law is requesting carrot cake for his birthday. My last attempt at carrot cake was disappointing. Does anyone have a tried & true carrot cake recipe? Thanks.

I have one from allrecipes that I have used for several years. It makes a 9x13 cake with cream cheese frosting. It is wonderful and has not failed me yet. I have brought it to many family and work events. There have been several people tell me that they don't like carrot cake, but they like this one.
Unfortunately, at the moment, I am having technical difficulties with the allrecipes website to remember exactly which one it is. If you send me an e-mail at angela_regnier@hotmail.com, I'm sure I have a copy printed off at home.

The Triple Layer Carrot Cake with Cream Cheese Frosting from Epicurious is my go to recipe. It is the first thing my step-son requests when he comes to visit.

I remember thinking that Val's husband, parents, neighbors and friends had they're fill of carrot cake bake then! :p

Here is my tried and true recipe. I've made it many times in the past and always had great success with it. The recipe is from, The Victory Garden Cookbook, by Marian Morash.
Carrot Cake
2 cups flour
2 tsp baking soda
2 tsp baking powder
1 tsp salt
1 tsp cinnamon
1/4 tsp mace
1 1/2 cups sugar
1 1/4 cups oil
4 eggs
3 cups finely shredded carrots
1 Tbs finely grated lemon peel
3/4 cup chopped nuts
1/2 cup raisins (optional)
Sift together the flour, soda, baking powder, salt, and spices; set aside. Beat together the sugar and oil. Stir in the carrots, lemon peel, nuts, and raisins (if you like). Oil a 10" tube pan. Pour in the batter, tap on the counter to release any air bubbles, and bake in a preheated 350˚ oven for 50-60 minutes or until a toothpick inserted into the center of the cake comes out clean. Cool on a rack for 15 minutes. Invert and remove from the pan. Cool and frost.
Cream Cheese Frosting
8 oz cream cheese
6 Tbs soft sweet butter
1 tsp vanilla extract
2 - 2 1/2 cups confectioners' sugar
Combine the ingredients and beat until smooth and creamy.
Makes 2 1/2 - 3 cups

Thanks so much everyone! I am going to make the Mrs Fields carrot cake. So many of the cakes Val tested were ones I had looked at while searching for a recipe, it is so nice to have had someone else do the testing and tasting.
