LIME MELTAWAYS

Dec 98/Jan 99 issue

Makes about 10 dozen

3/4 cup (1 1/2 sticks) unsalted butter, room temp.
1 cup confectioners' sugar
2 tablespoons freshly squeezed lime juice, plus grated zest of 2 limes
1 tablespoon pure vanilla extract
1 3/4 cups plus two tablespoons all-purpose flour
2 tablespoons cornstarch
1/4 teaspoon salt

1. In the bowl of an electric mixer fitted with the whisk attachment, cream butter and 1/3 cup sugar until fluffy. Add the lime juice, zest, and vanilla; beat until fluffy.

2. In a medium bowl, whisk together flour, cornstarch, and salt. Add to butter mixture, and beat on low speed until combined.

3. Between two 8-by-12 inch pieces of parchment paper, roll dough into two 1 1/4 inch diameter logs. Chill at least one hour.

4. Heat oven to 350 degrees F. Line two baking sheets with parchment. Place remaining sugar in a resealable plastic bag. Remove parchment from logs; slice into 1/8 inch thick rounds. Place rounds on sheets, spaced 1 inch apart.

5. Bake until barely golden, about 15 minutes. Transfer cookies to a wire rack to cool slightly, 8 to 10 minutes. While still warm, place cookies in the sugar-filled bag; toss to coat. Bake or freeze remaining dough. Store in an airtight container up to 2 weeks.

Maybe I just had a bad day at work today and can't comprehend what this step means. Can somebody explain this to me? Why would you roll this dough between parchment paper? Does it mean with your hands or a rolling pin? Could I make these as drop cookies instead?

It's been a bad day and I have a severe migraine. If this is a stupid question, please forgive me. I want to make these for a luncheon tomorrow, though, so your explanation of this step would mean a lot. Thanks!

I haven't made these, but I would gather that you would divide the dough in half, and then using 1 piece of parchment paper for each half, roll the dough into a log, similar to the slice and bake cookies you buy at the grocery store. Then use the parchment to wrap the logs for chilling. MiMo, hope your migraine goes away soon!

You want to form two logs of dough that are 1 1/4 inches in diameter. Form each log on a piece of parchment paper with your hands and then wrap them up in the parchment and chill. Hope that makes sense.

I have made these before and they are very good. I don't think I would recommend doing these as a drop cookie. It's basically a shortbread cookie and it seems that these are generally made in a uniform size so that they cook evenly. You generally cook shortbread only until it is just brown around the edges - I think doing these as a drop cookie would cause the edges to brown too quickly and leave the center a bit underdone. Shortbread is just more delicate and less forgiving than other kinds of cookies.

Now that I've said all that, I'm no expert on baking, so for all I know, you CAN do shortbread as a drop cookie! :D :rolleyes:

I agree with Alysha. I wouldn't do it as a drop cookie, myself.

Thanks, Cherise!!! Two Excedrin Migraine and a 45-minute nap later, I feel almost 100%.

THANKS to all of you for answering this question for me. I read the instructions three times before posting, and it made less sense to me after the third time than the first. I'll let you know how (or should I say if) they turn out.

Thanks again to all of you. Since I know absolutely nobody who cooks, I'm glad I have a place to come to ask my questions (no matter how dumb they are; thank goodness I can't hear if you guys laugh at them). This BB and all of you are the BEST!!!!
