The recipe I have for this yummy-sounding side dish calls for "1 each chicken broth, packet." I'm not sure what that means. Anyone out there have this recipe who can clear this up for me? I'd love to try this recipe but it has me a bit confused right now. Thanks much!

There are several varieties of chicken broth packages (a dry powder that is mixed with water to make a chicken broth). You can substitute regular chicken broth -- the same amount as the water in the recipe. I've made this recipe several times and we love it. It is also very convenient because it cooks at the same temp as several oven pork tenderloin recipes which makes life easier!

Just wanted to thank you for posting the wonderful Potatoes Parmigiana recipe. Tonight, I finally got around to making it and it was fabulous! Everyone in my house gave it a big thumbs up! I used the canned chicken broth instead of the packets. Yummy!

Potatoes Parmigiana

1 1/2 cups water
1/2 teaspoon salt
1 each chicken broth, packet
2 teaspoons Tabasco sauce
4 small baking potatoes -- peeled, sliced
2 medium green onions -- sliced
1/2 teaspoon salt
1/2 cup Parmesan cheese -- divided

1. Heat oven to 400 degrees. Heat water, salt, chicken broth packet and Tabasco to boiling in an ovenproof 12 inch skillet or casserole dish over high heat. When water has been boiling about a minute, stir well to dissolve chicken powder. Add the sliced potatoes, green onions, salt and 1/4 cup of the grated parmesan cheese. Toss to mix well. Level the mixture and transfer the skillet to the preheated oven. Bake, uncovered, for 25-30 minutes at 400 degrees until potatoes are tender.

2. Remove from oven, increase heat to broil. Sprinkle remaining cheese over potatoes; return skillet to oven and broil about 3 minutes or until potatoes are golden.

Yield: 4 servings.
