I made some Thousand Island dressing for reubens a few nights ago and have a lot left over. I don't really care for it on salads but I'd like to use it up somehow. Do any of you have any recipes or sandwich ideas that call for it? TIA

It makes a great sauce for cold, steamed shrimp. You could spice it up with a little Tabasco or the hot sauce of your choice if you like.

Well, actually, I was thinking of suggesting patty melts.

The dressing makes a great chicken salad ;)

Would you mind sharing your recipe?

reubens!!!

Cheryl, looks like you and I aren't very good at reading OP's :D

Rhianna, when you said you don't really care for it on salads, did you mean the lettuce type of salad?

We like to mix it with cooked shrimp and chunks of avocado. Yum!

I had originally made it for reubens and ended up with too much. Yes, when I said I don't like it on salad, I meant to dress a green salad. I like the idea of the chicken salad (as well as the other suggestions--even the patty melt :D!). Here's the recipe I use--it's super simple:

Thousand Island Dressing

1 cup mayonnaise
1/3 cup ketchup
1/4 cup pickle relish
1 tablespoon chopped onion
1 hard cooked egg, chopped

Mix all ingredients together well. Cover and chill

Makes 2 cups

We use 1000 Island dressing on Taco Salad. That was what my MIL always used and what I use too.

Thank you for the recipe. When I was younger, it was the only dressing I used. It might be nice to make my own for a change. ;)
