Does anyone have a quick and easy recipe for little children. My girl scout troop is planning a camping trip for the younger children, for a badge the children have to make a Trail Mix. Any suggestions? Thank you.

I make this when I go hiking. I mix an oatmeal based cereal---a granola type one. I mix it with dried fruit (my favorite is blueberries but any will do--dried cranberries, whatever, etc.) I throw in yogurt covered raisins, some chocolate chips and some nuts. My favorite is sliced almonds but peanuts or hazelnuts are also nice. Pretty utilitarian, but yummy.

My recipe for trail mix sounds almost identical to Kristi's! I use Kellogg's Low-Fat Granola as the base, then I add a package or two of Fruit Bits (mixed dried fruit -- I think Dole makes it), some mixed nuts (I try to find reduced fat), and M&M's. I've also heard of people adding small pretzels and other kinds of cereal like Chex, Cheerios, or the new Grape Nuts O's.
How young are the kids who are doing this? If they're old enough to handle choices, maybe you could have a variety of ingredients available and let them choose which ones they want in their own personal version of the trail mix. But if they're too young, giving them more limited options would probably be a lot easier on you! Have fun! http://www.cookinglight.com/bbs/smile.gif

This recipe is very nutritious.
1 cup crunchy cereal
handful raisins
handful dried minced apricots
a few tbsp sesame seeds
chocolate bits(optional)
coconut bits (optional)
Mix well and store in a jar. May also add: dried fruit, sunflower seeds, pretzels, mini ritz, nuts, popcorn
Also, CL's July/August 1998 had this recipe which I think is very good. FYI, it uses the oven to bake the granola for an hour.

Crunchy Granola with Dried Fruit

1 cup boiling water
1/2 cup sweetened dried cranberries (such as
Craisins)
1/4 cup packed brown sugar
1 (6-ounce) bag dried mixed tropical fruit
3 cups regular oats
1/2 cup sliced almonds
1/2 cup roasted sunflower kernels
1/4 cup flaked sweetened coconut
2 tablespoons nonfat dry milk
1 teaspoon ground cinnamon
Preheat oven to 300º.
Combine the first 4 ingredients in a bowl, and let stand 15 minutes. Combine oats and remaining ingredients, and stir into the dried-fruit mixture. Sprinkle oat mixture over a jelly-roll pan, and bake at 300º for 1 hour, stirring every 15 minutes. Cool granola to room temperature. Store in an airtight container.
Serving Size: 1/2 cup. Makes 6 cups
